Spicy Pan Fried Chicken

(Ayam Bumbu Rujak)

Spicy Pan Fried Chicken or better known in Indonesia as Ayam Bumbu Rujak is one of best Indonesian Recipe.

It's a great chicken oriental recipe, delicious and spicy.

It's very easy to make it if you know how and which ingredients you need to obtain to make this tasteful oriental food.

This Indonesian food often use to complete the rice table or to decorate yellow rice for a party.

Ingredients:

  • 1 kilogram drumsticks
  • 6 cloves garlic
  • 1 onion or 3 big shallots
  • 5 candlenuts
  • 1 teaspoon terasi (dry shrimp paste)
  • 15 Red Chilies, chopped
  • 1 piece of ginger (1 inch)
  • 2 lemon grass stalk, bruised
  • 1 piece of galangal (1 inch)
  • 5 bay leaves
  • Salt
  • Sugar
  • 500 cc coconut milk
  • Vegetable oil

Instructions:

  • Make a smooth paste from garlic, onion, and candle nuts. Set aside.
  • Rub the drumsticks with white vinegar or lemon juice, then wash very good with water. Baked the drumsticks in heat oil until dry and brown. Set aside.
  • Heat 2 tablespoon vegetable oil in the pan, add the smooth paste, stir it until fragrant, add terasi, Red Chilies, ginger, lemon grass stalk, galangal, bay leaves, and the drumsticks. Stir it until they mixed well.
  • Add coconut milk, sugar and salt, and lower the heat. Let it simmer with lid for 1/2 hour.
  • Ready to serve
